Friday Feb. 12th

I wasn't in much of a cooking mood this morning, but had to make something. So I fired up the egg/sausage cooker and threw something together. I just had one egg and one pork sausage patty with cheese and to change things up, I rolled it in a flour tortilla. Different right? I sprinkled a little Perfect Pinch on the egg, a little ground black pepper on the patty and the cooker steamed the two. When it finished I placed a slice of mild cheddar cheese from Gibbsville on the patty and covered it back up to melt. While the cheese melted I threw the tortilla into the microwave for a few seconds to warm up. I placed the sausage and egg on the tortilla and folded it sort of haphazardly, creating this delicious breakfast sandwich. I just thought, post-eating, I have salsa in the refrigerator I could have poured on the top of the egg. I also thought during this writing, I could have fired up the griddle and browned the tortilla slightly with a little butter or some cooking spray. Either way, it was good.
The cook time was maybe five minutes tops. I'm sure it took longer writing this blog than to make breakfast.

Thursday Feb. 11th

Today I'm making an omelette. I am making a 3 egger, with ham and mild cheddar cheese and a small amount of cream cheese. I diced the ham and fried it, with a little canola cooking spray, until it was browned. While the ham was cooking I placed the cream cheese in the microwave to soften for a little bit. The cream cheese was in a small blender container, so I added the eggs and a dash of milk, so the mixture wouldn't be real thick. I opted to put the milk in, although I may not have had to. I pulsed the blender a couple times and it turned out great.
By this time the ham was brown, so I removed it from the pan on paper towel to soak up any fat or whatever. I poured about a half cup water in the pan to removed the ham residue, which cooks off rather nicely. Not doing this, the eggs will stick to the pan no matter how much cooking spray you use. I poured the water out, sprayed the pan and poured in the eggs. I sprinkled some Perfect Pinch on, covered the pan and let it cook a few minutes. While this cooked I cut a few slices of cheese. I lifted the cover and the eggs fluffed up to like 3 inches high. It right away went down, so I proceeded to flipping it over. I placed the ham on half of the eggs and placed two slices of cheese on it. By the way the cheese is from Gibbsville. Thanks guys, your cheese is the best.
I replaced the cover and turned the heat off at this point. The eggs are primarily cooked and just need a little browning. After a minute I remove the cover, flip the empty side over on top of the ham/cheese side and place two more slices of cheese on the top and replace the cover to melt the new cheese. There still is enough heat in the pan to melt the cheese and not burn the eggs. I use an electric stove, so your mileage may vary if you use gas or the glass top. Experiment a little.
Afterwards I slide out the omelette on my plate and start enjoying. I would normally have added some onion and fried it with the ham because the onion adds some real good flavor to the ham and the eggs. I just didn't have any on hand.

Wednesday Feb. 10th

I feel much better today. I made myself a big breakfast sandwich consisting of wheat toast, two eggs, two plain sausage patties and some mild cheddar cheese. I started the griddle and warmed it up to 300 degrees. I threw on the patties to brown (they are pre-cooked), applied some canola cooking spray to the griddle and mixed the two eggs together. I have one of those Magic Bullets, which is like a small blender. I love it for mixing and chopping small stuff. Eggs beat real nice with a couple pulses, and it cleans up nice and quick.
I poured the eggs on the griddle in a somewhat square fashion so the eggs will fold nicely on toast. I sprinkled some McCormick Perfect Pinch Original on the eggs along with a little ground black pepper. This gives the eggs a little extra oomph in the flavor department.With the eggs spread out, they cook quite fast and I am ready to flip it. The spray makes it not stick, plus I use a Teflon coated griddle. Once flipped, I place about a 1/4 cup of the cheddar cheese to a quarter section of the eggs for folding purposes. The cheese is from Sargento and is pre-shredded in the package. Makes life a little easier to just grab a bag of shredded cheese and spread it on instead of having to slice or shred by hand. Plus the shredded cheese melts faster than sliced.
The sausage was cooked, the toast just popped out of the toaster and I start making my sandwich. I applied a little butter to the toast. placed the sausage on the cheese. Folded the eggs once over the sausage and again over itself and scooped it up and placed it on the toast. Put on the top and start enjoying.
This didn't really take that long to make. The eggs cook fast, the sausage just needs warming, and the rest is simple. Give it a try. You'll love it.

Sunday Feb. 7th

I was taken ill this morning with some type of flu. Not the swine flu, but just the run of the mill stomach flu. I don't really want to get into the specifics because it might gross some people out, but it stopped me from eating a breakfast. I did later drink some white soda and crackers, but I didn't consider it to be a breakfast.
I could have made some toast, but plain toast is like eating cardboard without a little butter. I'll be back tomorrow, hopefully well enough to make and eat a little something for breakfast. I may not eat an egg, but maybe some cereal with a little milk.

Saturday Feb. 6th

I asked my wife what to make for breakfast and she said pancakes. I looked in the cupboard and found some boxed Jiffy Raspberry muffin mix, so I decided to make them into pancakes. I fried up a pound of bacon and placed them on paper toweling to soak up some or most of the bad stuff and proceeded to make the pancakes. It takes very little time for pancakes to cook when the griddle is at 400 degrees. I applied some olive oil cooking spray beforehand and then flip them when needed. I think they turned out well, though I didn't have any fresh fruit to have with it. Some strawberries or even fresh raspberries would complement this dish perfectly. The bacon was crispy, the way I like it, and the maple syrup was warmed up before pouring it on the pancakes. I did spread a little butter on the pancakes before the syrup, old habit, and then wah-lah! Breakfast is served.

Friday Feb. 5th

Well, this is my first blog and my first posting. Hope everyone enjoys it. What I have for breakfast today is a simple egg, sausage, muffin with cheese. I have a kitchen appliance that makes the process real simple, so I use it often.
I buttered the muffin and fried it on the griddle while waiting for the egg and sausage to cook. I bought a package of spicy sausage so that should give the sandwich a little zing. The cheese is just American cheese from Kraft. I totaled up what it cost me to make and it came up to 60 cents. The time it took was a few minutes.
Biting in was a joy. The crunch from the fried muffin and the buttery flavor, the spice from the sausage. All I can say is "Mmm". Beats going to a fast food joint.
